Window Tookies

These cookies are fun and delicious. Two sugar cookies are baked with a raisin filling that show through a cut out window in the top cookie.
Ingredients
- Raisin Filling:
- 1 cup raisins
- 1 cup boiling water
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1 tbsp cornstarch
- 1 tsp grated lemon rind
- 1 tsp grated orange rind
- Sugar Cookies:
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 2 tsp grated lemon rind
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 2 1/2 cup sifted flour
- 1/4 cup milk
- Powdered sugar for dusting

Method
Filling: Add raisins to water then simmer until tender, 3-5 minutes. Combine sugars and cornstarch then stir into hot raisins. Cook slowly, stirring constantly, to a full boil. Boil 1 minute, add lemon and orange rind, then remove from heat and cool. Cookies: Cream butter and sugar thoroughly. Add egg, vanilla and lemon rind. Beat until mixture is light and fluffy. Sift dry ingredients then stir into creamed mixture with milk. Divide dough in half and chill 1 hour. Roll out half of dough, on a floured board, keeping remainder chilled until needed. Roll dough 1/4 inch thick. With a round cookie cutter, about 2 1/2 inch diameter. Cut out bottom half of cookies and place on a greased baking sheet, one inch apart. Place about one teaspoon of raisin filling in middle of each cookie. For tops of cookies, roll just like for the bottoms, but cut a small hole, about one inch diameter in the center and place it on top so the raisin filling shows in the window. Bake at 350 degrees, about 15 minutes. The cookies are done when the edges start to turn golden brown and the raisin filling starts to bubble. Cool cookies slightly, then remove to a rack and dust with powdered sugar.
