White Chocolate Macademia Cranberry Pinwheels

These festive cookies are a great addition to any holiday party. The white chocolate, macadamia nuts, and cranberries are great together.
 

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 oz square white chocolate
  • 1/2 cup finely chopped macadamia nuts
  • 1/2 cup chopped dried cranberries
  • 1/4 tsp red food coloring

Method

Melt chocolate in microwave oven and let cool. Cream together butter and sugar. Beat in egg and vanilla. In a separate bowl, combine flour, baking powder and salt. Add flour mixture to butter mixture. Divide dough in half. For one half, stir in melted chocolate and macadamia nuts. For other half stir in dried cranberries and red food coloring. Roll out each half of dough on waxed paper into an approximately 10 x 12 inch rectangle. Place one layer on top of other layer and roll up together like a jelly roll. Refrigerate dough until thoroughly chilled. Cut log into thin slices and bake at 375 degrees for 8 to 10 minutes.
