White Chocolate Chip Oatmeal Cookies

Butter, brown and granulated sugars, eggs, flour and rolled oats form the batter for these oatmeal cookies. White chocolate chips and pecans are the fun additions.
 

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup firmly packed light brown sugar
  • 1 cup sugar
  • 2 large eggs
  • 2 tsp. vanilla
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cup uncooked regular oats
  • 2 cups (12 oz) white chocolate chips
  • 1 cup coarsley chopped pecans

Method

Beat butter at medium speed with an electric mixer for 30 seconds; add sugars and beat well. Add eggs, 1 at a time, beating just until combined after each. Stir in vanilla. Combine flour and next 2 ingredients; gradually add to butter mixture, beating until blended. Stir in oats, then chips and pecans. Drop by tablespoon onto greased baking sheets. Bake at 350 degrees about 12 minutes. Cool on baking sheets 1 to 2 minutes. Remove to rack to cool.
