Turtle Cookie Bar

If chocolate, caramel, and pecans are your thing, try them over the top of your cookie and you'll be in turtle heaven.
 

Ingredients

  • Cookie:
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 stick butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 tsp vanilla
  • Topping:
  • 1/2 cup sweetened condensed milk
  • 1 16 ounce bag chocolate chips, semisweet or milk chocolate
  • 1 bag caramel candies, unwrapped
  • 1 8 ounce bag walnuts or pecans

Method

Preheat oven to 350 degrees. Place flour, salt and baking soda in a small bowl and set aside. In a large bowl, cream butter and both sugars together until they create an off white mixture. Add egg and mix until fully incorporated then add vanilla. Place flour mixture into butter mixture in three parts. Mix until fully incorporated. Be careful not to over mix. Place cookie mix in a 2 quart baking dish and bake for 20 minutes. Allow to cool 10 minutes before you put the toppings on. Toppings: In a double boiler, place unwrapped caramels with condensed milk. Melt down into a thick creamy consistency. Spread nuts over cookie and cover with melted caramel. While caramel cools, place chocolate in a microwave safe bowl and place in microwave for 2 minutes, stirring every 30 seconds until fully melted. Pour melted chocolate over cookie. Allow to cool at least 30 minutes before serving.

 

Notes: The cookie part of recipe can be made up to 3 days in advance. After cookie has cooled, cover baking dish with plastic wrap and place in a cool place in your kitchen.
