All your favorite cookie ingredients rolled into one cookie--oatmeal, chocolate chips, butterscotch chips, coconut, and nuts.
 

Ingredients

  • 1 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon rum extract
  • 1/2 teaspoon butter extract
  • 1 tablespoon molasses
  • 2 eggs
  • 2 1/4 cups flour
  • 2 cups quick-cooking oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup flaked cocoanut
  • 1/2 cup semisweet chocolate morsels
  • 1/4 cup butterscotch morsels

Method

Preheat oven to 375 degrees. Coat cookie sheets with nonstick cooking spray; set aside. In a bowl beat together butter and brown sugar until light and smooth. Add vanilla, rum extract, butter extract, and molasses. Add eggs; beat well. In another bowl combine flour, oats, cinnamon, and nutmeg. Add flour mixture to butter mixture; blend well. Fold in nuts, coconut, and morsels. Mix thoroughly. Drop dough by teaspoons onto prepared cookie sheets. Bake for 8 to 10 minutes or until edges are lightly browned. Transfer to racks to cool.
