Triple Raspberry Gooeys

A homemade raspberry coulis makes these chocolate rich brownies delectable and the perfect finish to any meal.
Ingredients
- 2 cups fresh or frozen raspberries
- 2 tbsp orange liqueur (Grand Marnier, optional)
- 3/4 cup white granulated sugar
- 1 tbsp lemon juice
- 1 cup bittersweet chocolate shavings
- 3/4 stick unsalted butter, room temperature
- 2/3 cup vegetable oil
- 1/4 cup white granulated sugar
- 3/4 cup light brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 3 cups miniature semisweet chocolate chips
- 3/4 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp salt
- 2 cups seedless red raspberry preserves

Preheat the oven to 350 degrees F. Grease, flour or spray an 8 inch brownie pan and set aside. In a large bowl, sift the flour, baking powder, salt and unsweetened cocoa powder together. In a separate smaller bowl, beat the two eggs and add in the light brown sugar slowly. Add in the 1/4 cup granulated sugar, miniature chocolate chips and vegetable oil. Combine the two mixtures together in the large bowl. Place the raspberries in a medium saucepan over medium-high heat, whisking in sugar, orange liqueur and lemon juice until mixture starts to thicken. This process usually takes about 15 minutes. Turn the heat down to low once the coulis thickens. Whisk in the bittersweet chocolate and butter, making sure this melts completely, and whisking in the vanilla extract until the mixture is liquefied. Slowly fold the coulis into the first mixture, making sure that the coulis is not too hot first. Put half of the batter into the greased baking pan. Gently smooth the red raspberry preserves on top of the batter in the pan. Then add the remaining batter over the preserves, carefully so not to disturb your filling layer. Bake these for 25-30 minutes or until they are still gooey looking. Be sure not to over bake these brownies, as they are better gooey than dry.
