Thumbprint Cookies

These easy cookies are a great way to get the kids involved in the kitchen. Invite them to press their thumb into the cookies before they're baked.
Ingredients
- 1/4 c. butter
- 3/4 c. shortening
- 1/4 c. brown sugar
- 1 egg, separated
- 1/2 tsp. vanilla
- 1 c. flour
- 1/4 tsp. salt
- 3/4 c. finely chopped nuts

Method
Preheat oven to 350. Mix butter, shortening, sugar, egg yolk and vanilla. Work in flour and salt until dough holds together. Shape into teaspoonful balls. Beat egg white slightly. Dip each ball into egg white. Roll in nuts and place on ungreased baking sheet. Press thumb deeply in center. Bake 10 minutes and remove immediately from baking sheet, cool and fill thumbprint with jelly.
