Sunny Lemonade Cookies

A definite summertime cookie made with concentrated lemonade mix that has a nice citrus flavor.

Ingredients:

• 1 cup butter or margarine  
• 1 cup sugar  
• 2 eggs  
• 3 cups sifted all purpose flour  
• 1 tsp. baking soda  
• 1 tsp vanilla  
• 6 ounce can frozen Lemonade defrosted (reserving quarter cup set aside)

Method

Cream sugar and butter together Add vanilla. Add eggs one at time. Beat until light and fluffy. Sift flour and soda. Slowly add flour to creamed ingredients, alternating with defrosted lemonade Chill dough for 1 hour Drop by spoonfuls onto a greased cookie sheet. Flatten cookies with the bottom of a glass dipped in sugar. Bake at 350 degrees for 10 to 12 minutes. Cool. Brush top of cookies with lemonade concentrate and then sprinkle with sugar

Notes: A tart, refreshing change-of-pace cookie.
