This melt-in-the-mouth cookie is made with only three ingredients--flour, sugar and butter, and coated after baking with superfine sugar.
 

Ingredients

  • 1 cup granulated sugar
  • 1 cup sweet butter, softened
  • 2 cups flour, sifted
  • 3/4 cup superfine sugar

Method

Beat granulated sugar with butter. Stir in flour and mix with hands until satiny. Refrigerate 10 minutes. Roll onto a lightly floured surface about 1/4-inch thickness. Cut with a round biscuit or cookie cutter. Place on a lightly greased cookie sheet. Bake at 300 degrees for 10 minutes. Cookie will be be very lightly browned on bottom, not brown on top, and will not spread. Remove from sheet and cool on a rack. When cool, turn each cookie over in the superfine sugar to coat.

 

Notes: Must use real butter and granulated sugar, no substitutes. Superfine sugar can be made by putting granulated sugar in the blender and blending to a fine texture.
