Spiced Oatmeal Raisin Cookies

Ground pecans add moistness and a nutty flavor to traditional oatmeal raisin cookies.

Ingredients:

  • 1 cup, unsalted butter
  • 2 cups packed brown sugar
  • 2 eggs
  • 2 tbsp sour milk
  • 2 1/2 cups all purpose flour
  • 2 cups old fashioned oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 cup ground pecans
  • 3/4 cup raisins

Method

In a mixing bowl, cream butter and brown sugar. Add eggs and milk then mix well. Measure out 1/2 cup pecans and blend until they reach a fine texture. Combine flour, oats, baking soda, cinnamon, and pecans. Slowly add to wet mixture and mix well. Fold in raisins. Drop a rounded tablespoon 2 inches apart on lightly greased baking sheet. Bake at 350 degrees for 12-15 minutes or until lightly browned.

Notes: The ground nuts adds moisture to the recipe and a nutty flavor without the kids knowing there are nuts in the cookies.

Number of servings: 2 dozen large cookies
