Preheat oven to 350 degrees. In bowl of an electric mixer, on medium speed, cream together butter and sugar until well blended. Gradually mix in flour and baking soda. Stir in coconut and mix well. Roll dough into 1 inch balls and place on nonstick cookie sheets, or cookie sheets lined with parchment paper. Press an almond into center of each cookie and bake about 8 minutes, or until golden.
These are so easy and delicious and kids love to help make them.
