The dough for these shaped cookies contains saffron, which gives a yellow color, and is flavored with cardamom. It's formed into balls, flattened slightly and decorated with pistachios before baking.


¼ tsp Thread Saffron, crushed
1 cup All Purpose Flour
½ cup Butter
½ cup Granulated Sugar
¼ tsp Cardamom Powder
1 Tbsp Chopped Cashew Nuts
1 Tbsp Chopped Pistachios


Soak saffron in 1 tsp of hot water. Mix butter with sugar till creamy. Add flour, baking powder, saffron, cardamom powder, and cashew nuts. Mix well. Make small balls of this dough and flatten them. Brush lightly with milk and decorate each flattened ball with pistachio on top. Preheat oven to 350 F. Place cookies on an ungreased baking sheet and bake for 20-25 minutes or until they turn very light golden in color. Cool and store the cookies in an airtight container.

Helpful Tips:

Use milk to stick the pistachio.
