Refrigerator Cookies

These brown sugar-pecan cookies are chilled in a log and sliced thinly, then baked until golden.
 

Ingredients

  • 1 cup shortening
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoons vanilla
  • 2 eggs
  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 to 1 cup finely chopped pecans

Method

Beat shortening, sugars and vanilla. Add eggs, one at a time. Combine flour, salt and soda; stir into egg mixture. Stir in pecans. Shape into 2-inch square rolls. Wrap in wax paper or plastic wrap. Refrigerate several hours or overnight. Slice thin. Place on cookie sheet. Bake at 400F for 6 to 8 minutes or until golden brown.
