Ready When You Are Chocolate Almond Slices

A great recipe to keep on hand for those surprise guests because you can make the dough when you have time and bake the cookies when ever you need them.
 

Ingredients

  • 1 cup flour
  • 1/4 cup vegetable shortening
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1/4 cup plus 2 tablespoons sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 4 oz bittersweet chocolate, finely chopped
  • 1/2 cup finely chopped almonds
  • 1 egg yolk, beaten with 1 teaspoon water

Method

Cut shortening and butter into flour with pastry blender. By hand, work in salt, sugar, vanilla, almond extract and chocolate. Shape into two logs, about 1 1/2 inches in diameter. Brush outsides of logs with egg yolk and roll in chopped almonds. Wrap in waxed paper or plastic wrap and place in zip-top bag. Refrigerate until ready to use. Will keep up to week. When you want to make cookies, preheat oven to 400 degrees. Slice as many cookies as you would like, making slices 1/4 inch thick. Bake on lightly greased cookie sheet for 8-10 minutes. Cookies will not brown, but will be done if they do not leave an imprint if touched lightly.

 

Notes: The cookie dough can be kept in the refrigerator for up to a week, and you can make as many cookies as you want whenever you want. I like to make a dozen at a time for snacking, but you can also make all of them at once for a party or to share with friends.
