Quick Oatmeal Cookies

Quick nutritious cookie made from individual instant oatmeal packets. The original intent was a gluten-free cookie. That was accomplished along with it being a quick cookie for a teenager or college student to make.

  • Servings: 12 cookies
  • Prep Time: 15 minutes
  • Cook Time: approx. 8 minutes
  • Total Time: about 45 minutes


5 Packets of Quaker Oatmeal With Raisin, date and walnut (equals 1 ¼ cups
1 Egg
¼ cup Sugar
⅓ cup Regular Peanut Butter
½ tsp Baking Soda
1 tsp Cinnamon


Preheat the oven to 350 degrees F

mix the peanut butter, egg, sugar and cinnamon until blended

add in the packets of oatmeal and baking soda, mixing until blended.

form into 12 even portions

Place on a shiny prepared baking sheet(sprayed or lined with parchment paper)

flatten just a little because they do not spread much.

Bake about 8 minutes, watch carefully, when cracks appear, remove from oven and leave on cookie sheet to cool for at least 5 minutes.

Carefully lift to a plate or cookie rack to finish cooling. Once cooled they are not brittle.
