Pumpkin Nut Cookies with Butterscotch Frosting

Walnuts and raisins combine with pumpkin to make these soft cookies. The butterscotch frosting really blends the flavors nicely.
 

Ingredients

  • 1 1/2 cups sugar
  • 1 cup canned pumpkin
  • 1 stick softened butter
  • 2 eggs
  • 1 tsp vanilla
  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp grated fresh nutmeg
  • 1 tsp salt
  • 1 cup raisins
  • 1 cup walnuts
  • 1 cup butterscotch chips
  • 2 tbsp honey
  • 1 tbsp milk

Method

Preheat oven to 350 degrees. Mix butter and sugar until creamy. Add pumpkin and eggs, continuing to beat until fully blended. Add baking powder, baking soda, cinnamon, nutmeg and salt. Mix until combined then add flour, raisins and nuts. Drop dough by the tablespoonful onto a lightly greased baking sheet and bake 10-15 minutes. Let cool 5 minutes, remove from baking sheet and cool cookies on a wire rack. Frosting: Place butterscotch chips, honey and milk in a microwave safe bowl. Microwave for 30 seconds at a time, stirring between intervals, until smooth then cool slightly. When fully cooled, frost cookies and allow butterscotch frosting to harden.
