Pumpkin Cookies with Frosting

These chewy cookies are a great treat; the frosting is a perfect glaze.Ingredients
- 3/4 cup margarine
- 1 1/2 cups brown sugar
- 2 eggs
- 2/3 cup pumpkin puree
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- For Frosting:
- 3 tablespoons of butter
- 1/2 cup pumpkin puree
- 2 1/2 cups powdered
- 1 teaspoon vanilla extract
- 4 tablespoons milk

Method
In a large bowl, mix butter with brown sugar until smooth. Then, add the eggs, pumpkin puree and vanilla. After it's smooth, slowly add the flour, cinnamon, nutmeg, ginger, baking powder and soda. Beat until smooth. Using an ice cream scoop, drop onto lightly greased cookie sheets. Bake pumpkin cookies at 375 degrees F. for 10 to 15 minutes or when lightly browned. After cookies are completely cool, add frosting. Frosting: Brown the butter in a saucepan, then add to powdered sugar. Add the rest of ingredients with more or less milk and puree until desired consistency and taste.
Notes:
Number of Servings: Depending on size, usually 24 cookies.
