Pumpkin Bars

These moist, rich, spicy pumpkin bars have raisins stirred into the batter, and are spread with a cream cheese frosting.
 

Ingredients

  • 4 eggs
  • 2 C. sugar
  • 1 C. oil
  • 1 15 oz. can pumpkin
  • 2 C. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 2 tsp. cinnamon
  • 1 C. raisins
  • Frosting:
  • 3 oz. pkg. cream cheese (softened)
  • 1/3 c. margarine or butter, softened
  • 1 Tbs. milk
  • 2 C. powdered sugar
  • 1 tsp. vanilla

Method

Preheat oven to 350 degrees. Grease a 15x10x1" jelly roll pan. In large bowl beat eggs. Add sugar, oil, and pumpkin. Beat 2 min. at medium speed. Add flour, baking powder, soda, salt, & cinnamon. Beat 1 min. at low speed. Stir in raisins. Pour into prepared pan and bake at 350 degrees for 25-30 minutes or until toothpick comes out clean. Cool. In small bowl beat cream cheese, butter, milk, and vanilla. Add powdered sugar, blend until smooth. Spread on top. Cut into bars. Makes 48 bars.
