Pumpkin Bar Cookies

A purchased yellow cake mix combines with canned pumpkin, eggs, pumpkin pie spice and cinnamon to make these easy bar cookies that are spread with canned cream cheese frosting.
Ingredients
- 1 box yellow cake mix (2-layer size)
- 2 eggs, beaten
- 1 tablespoon butter, softened
- 1 15-oz. can pumpkin
- 2 teaspoons pumpkin pie spice
- 2 teaspoons cinnamon
- 1 can cream cheese frosting

Method
Mix everything together except frosting. Make bars or cookies from mixture. Bake at 375 degrees about 10-15 minutes until light brown. For a firmer bar or cookie, add 1/4 cup flour. Frost with the canned frosting.
Notes: We make this for Thanksgiving, instead of pumpkin pie, and the kids love it.
