A familiar favorite with a twist--chunky peanut butter gives these crisp cookies a little extra crunch.
Preheat oven to 375 degrees. Lightly grease 2 cookie sheets. In a large bowl, using an electric mixer at high speed, beat peanut butter, shortening and butter until well combined--about 1 minute. Add granulated sugar and brown sugar then beat until light and fluffy, about 2 1/2 minutes. Beat in eggs. Using a wooden spoon, stir in flour. Using 1 tablespoon dough for each, form into balls. Place balls 2 inches apart on prepared cookie sheets. Use a fork to flatten each ball of dough with a crosshatch pattern. Bake, switching the position of the sheets from top to bottom halfway through baking, until cookies are lightly brown around edges, 12 to 15 minutes. Let cool on pan for 1 minute, then transfer to wire cake racks to cool completely.
Notes:
For best results position racks in top third and center of oven.
