Peanut Coconut Surprise Cookies

Coconut lovers will enjoy these drop cookies. Soft granola bars add chewiness.
Ingredients
- 3 cups Unbleached all-purpose Flour
- 1 teaspoon baking soda
- 1/2 cup peanut butter
- 1/2 cup margarine or butter (at room temperature cut into pieces)
- 1/2 cup granulated sugar
- 1 1/2 cups brown sugar
- 1 cup sour cream
- 2 eggs
- 1 cup shredded coconut
- 4 Nature Valley Sweet and Salty soft granola bars (4 pouches from 8.9 oz box), crushed (1 cup)

Method
1. Heat oven to 350 degrees F. Spray cookie sheet with non-stick cooking spray. 2. In medium bowl, combine flour and baking soda. Mix well. 3. In large bowl combine granulated sugar, brown sugar and margarine, beat until light and fluffy. Add sour cream; beat well. Add eggs; beat well. Add Flour mixture; blend well. Stir in shredded coconut and crushed granola bars. 4. Drop by tablespoon 2 inches apart. 5. Bake for 10-12 minutes or until edges are golden brown. Remove and cool on wire racks.
Notes: Tips: To crush soft granola break into pieces, place in mini chopper until mixture is crumbly. *If desired, baked cookies can be drizzled with chocolate frosting.
Number of Servings: makes 2-3 dozen
