Peanut Butter Cup Oatmeal Cookies

Two of your favorite cookies in one--chewy oatmeal cookies flavored with chunks of peanut butter cup candy.
 

Ingredients

  • 1 cup softened butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups all purpose flour
  • 3 cups quick cooking oats
  • 12 frozen peanut butter cups

Method

Mix together butter, both sugars, eggs and vanilla extract until creamy then set aside. Mix together flour, oats, salt and baking soda. Gradually mix all ingredients together until well blended. Open and place frozen peanut butter cups in a food processor then blend on high until crumbled. Mix into cookie dough and chill 1 hour. Preheat oven to 375 degrees. Use a small ice cream scoop to place cookies on a greased baking sheet. Flatten cookies with a fork, and bake for 10-12 minutes. Let cool 5 minutes before transferring to a cooling rack.
