Palm Beach Mint Brownies

The batter for these really rich brownies contains melted chocolate, butter, espresso powder, almond extract and nuts. It's layered with chocolate-covered peppermint patties, baked, and chilled for easier cutting.
Ingredients
- 8 oz. unsweetened chocolate
- 2 sticks unsalted butter
- 5 large eggs
- 3 1/4 Cup sugar
- 1 tbls. instant espresso powder
- 1 tbls. pure vanilla extract
- 1 teas. almond extract
- 1/2 teas. salt
- 1-2/3 C sifted flour
- 2 Cup walnuts, broken in large pieces
- 2 bags bite-size chocolate-covered peppermint patties (such as York)

Microwave or in a double boiler melt chocolate and butter, stir until smooth; set aside. Beat eggs, sugar, espresso powder, vanilla, almond extract and salt in large bowl with electric mixer at high speed for 10 minutes. While egg mixture is beating, line a 13x9x2" pan with foil and brush with butter or spray with Pam. Unwrap mints (you won't need them all). When egg mix has hit 10 minutes, reduce speed to low; add chocolate mixture (which may still be warm). Beat just until mixed. Add flour; beat on low speed just until mixed (at this point do not over-mix; be light handed). Remove bowl from mixer; stir in nuts. Pour HALF of mixture into the pan. Place 1 layer of mints all over batter, touching each other and edges of pan. Pour remaining chocolate mixture over; smooth top. Bake at 425 until brownies have firm crust, but center is wet when tested with toothpick, about 25 to 30 minutes. You may have some burned edges, which you can cut off later (my favorite part). Cool on wire rack. Remove from pan using the foil lining, and refrigerate 8 hours or overnight. To cut, use a serrated knife, divide in half then each half divide again. Cut each quarter into eight, they are rich. Pack in airtight container. These are soooooo good frozen.
Notes: Make sure and wait to cut them, or they will be a messy goo. If you can't wait, try putting them in the freezer for about 3 hours.
