Method

Cookies: Cream butter and sugar with mixer until fluffy, 3 to 4 minutes or so. Add almond extract, baking powder and salt, beat on medium until mixed. Add eggs, beat until mixed. With mixer on low, beat in flour. Dough will be sticky. Divide dough in thirds or quarters and place each into quart ziploc bags, removing all air, and chill for several hours. When ready to bake, preheat oven to 350 degrees and line cookie sheets with parchment paper. Take one bag of cookie dough from fridge and roll between sheets of plastic wrap to desired thickness, 1/4" or less. Remove top sheet of plastic wrap to cut cookies, then chill sheet of cookie dough on cutting board for 15 to 20 minutes. Working quickly, place cookie cut-outs on baking sheets and bake for 13 to 15 minutes, just until edges turn golden. Cool on pan for 10 minutes or so, and then transfer to wire rack. Icing: Beat egg whites until stiff. Add powdered sugar and beat until thick. Add water and beat until smooth. Use icing immediately, as it will crust and start to dry if left too long.

Notes:

Number of Servings: 3 to 5 dozen, depending on cookie size
