These cookies are baked in muffin pans. The dough contains brown sugar, rolled oats and walnuts, and a powdered sugar icing is later spread on top.
Ingredients
- Dough:
- 1 cup butter, softened
- 3/4 cup packed brown sugar
- 1 egg
- 1 tsp vanilla
- 1 cup flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp baking soda
- 1 cup oatmeal
- 1 cup chopped walnuts
- Frosting:
- 2 tbsp butter, softened
- 1 1/2 cups powdered sugar
- About 2 tbsp milk
- 1/4 tsp vanilla
- Red & green colored sugar

Method
Preheat oven to 375 degrees. In a bowl, cream butter and brown sugar; beat in vanilla and egg. Sift together flour, baking powder, salt & baking soda; add to wet ingredients. Stir in oatmeal and walnuts. Well-grease two, 12-cup muffin pans; drop dough by tablespoon; bake 15 to 18 minutes. Loosen edges with a sharp knife and remove to a cooling rack immediately. In a bowl, combine frosting ingredients and mix until smooth. Spread on cooled cookies and sprinkle with colored sugar.
