Maple Bacon Blondies

A maple flavored icing and crumbled bacon bits add a sweet and salty touch to pecan blondie bar cookies.

½ cup Salted Butter, softened
2 cups Firmly Packed Light Brown Sugar
2 Large Eggs
1 tsp Vanilla Extract
2 cups Self Rising Flour
1 cup Chopped Pecans
8 slices Bacon, thick sliced
1 cup Confectioners Sugar
¼ cup Pure Maple Syrup
¼ tsp Maple Flavoring
2 Tbsp Salted Butter, melted


Preheat oven to 325 degrees. Spray a 13 X 9 glass baking dish with floured nonstick cooking spray. In a large mixing bowl, use an electric mixer to cream together butter and brown sugar. Add eggs and vanilla extract. Turn mixer to low and gradually add flour. Using a wooden spoon, fold in pecans. Spread dough into baking dish and bake 30 minutes. While blondies are baking, in a large skillet, fry bacon slowly to extra crispy. Allow bacon to drain on paper towels. When bacon has cooled, crumble into bacon bits and set aside until ready to use. In a small mixing bowl, combine confectioners sugar, maple syrup, maple flavoring and melted butter then whisk together until smooth. Allow blondies to slightly cool, about 15 minutes. Spread maple icing over blondies and sprinkle with bacon bits. Cut into bars and serve.
