Linda's Diabetic Challenged Cookies

These cookies are so sweet they need a warning label. With peanut butter, maple flavoring, butterscotch chips and plenty of sugar, one is enough.
Ingredients
- 1 cup creamy peanut butter
- 1 cup butter
- 1 cup granulated sugar
- 2 eggs
- 1 cup brown sugar
- 2 1/2 tablespoons maple extract or flavoring
- 2 1/2 flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 pack butterscotch chips
- 1 1/2 cups brown sugar, set aside

Method
Cream together peanut butter, butter, granulated sugar, 1 cup brown sugar, eggs and maple flavoring. Add dry ingredients and blend thoroughly. Mix in butterscotch chips. Shape into walnut size balls. Roll in brown sugar. Criss-cross with a fork. Bake on ungreased cookie sheets at 375 for 10-12 minutes.
