Lemon Ginger Cookies

Spice up your cutout sugar cookies with lemon extract, cinnamon, and ginger. Spread cookies with a lemon icing or eat them plain.
Ingredients
- 1/2 c. Shortening
- 1/2 c. Unsalted Butter (softened)
- 1/4 c. packed Light Brown Sugar
- 3/4 c. Granulated Sugar
- 1 tsp. Vanilla
- 1 1/2 tsp. Lemon Extract
- 1 Egg White
- 1 tsp. Baking Powder
- 2 1/2 tsp. Ground Ginger
- 1/2 tsp. Ground Cinnamon
- 1/4 tsp. Salt
- 1 3/4 c. All Purpose Flour

Method
In medium size bowl, cream together shortening, butter, and sugars until light. Add in vanilla, lemon extract, and egg white- mix well. Sift together baking powder, ginger, cinnamon, salt, and flour. Combine with other ingredients in bowl, mix well until all flour is incorporated. Refrigerate covered dough until firm. Roll out on lightly floured surface to about 1/4" thickness, cut with floured cutters. Place on ungreased cookie sheets. Bake for ten minutes in oven preheated to 375 degrees or until lightly browned. Remove and cool on a wire rack.
