Lemon Bars

A perfect dessert for summer--light and refreshing lemon bars topped with a creamy powdered sugar frosting.

2 cups Flour
1 cup Butter, softened
½ cup Powdered Sugar
4 Eggs, beaten
2 cups Sugar
4 Tbsp Flour
6 Tbsp Lemon Juice
½ cup Butter, softened
1 cup Powdered Sugar
1 tsp Milk
2 Tbsp Cold Water


In a bowl cut in the crust ingredients with a fork until it forms pea sized pieces. Spray a 9 X 13 pan with nonstick spray. Pat the crust into the pan and bake in a 350 degree oven for 15 minutes. While crust is baking, prepare filling. In a bowl with an electric mixer, whip the eggs, then add the sugar, flour and lemon juice, mixing well. After the crust has baked for 15 minutes, remove from oven, and pour filling over top. Return pan to oven and continue to bake for 25 minutes. Cool completely before frosting. Prepare frosting by beating the softened butter, sugar and milk for 6 minutes on high speed. Add the cold water, one tablespoon at a time, then beating until smooth. Spread frosting on bars then store in refrigerator until serving.
