Lace Cookies

These thin and crisp cinnamon-flavored cookies are made with rolled oats, butter, sugar, egg, and very little flour.
Ingredients
- 1 c. sugar
- 1 tsp. cinnamon
- 1 cup quick Quaker rolled oats
- 2 Tbsp. plus 1 tsp. flour
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/4 lb. melted butter (1 stick)
- 1 egg, beaten
- 2 tsp. vanilla

Method
Mix all ingredients together. Cover cookie sheet with foil; drop 1/2 teaspoonfuls of dough 3-inches apart. Bake at 350 degrees 7 to 8 minutes until golden brown. Cool 10 to 15 min. Do not use foil twice. Makes 70 to 75 cookies.
Notes: I love this recipe. It is so simple that it is great to have the kids help. I also have gotten very creative over the years with this recipe. I love to give it as holiday cookie gifts, but when I do that, I add a little excitement. I melt some white chocolate and leave half white and take the other half and add red or green food coloring. Then when the cookies are all done I drizzle the white and colored chocolate all over the cookies and let it dry. Do whatever pattern you feel like. It turns out very festive.
