Hot Chocolate Dunkers

Crisp peanut butter biscotti are the perfect dunkers for creamy hot chocolate on a cold winter's day.
Ingredients
- 1/3 cup creamy peanut butter, melted
- 2 tablespoons peanut oil
- 3 eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3-3 1/4 cups all purpose flour
- 1 tablespoon baking powder
- Mugs of hot cocoa

Heat oven to 375 degrees. Grease 2 cookie sheets. In a medium bowl, beat peanut butter, oil, eggs, sugar and vanilla until well blended. Stir together flour and baking powder then stir into first mixture, adding more flour, if necessary to make a stiff dough. Divide dough in half. Form each half into a 16 inch long roll and place on a cookie sheet. Press each log to 1/2 inch thickness then bake 25 minutes. Remove from sheets and cool on rack. Slice each roll into 1/2 inch wide slices and place cookies, cut side down, on cookie sheet. Bake for 6 minutes per side. Serve cookies dipped in mugs of hot cocoa.
