Halloween Pumpkin Cookies

Pumpkin pie spice flavors the butter cookie dough that also contains brown sugar and soda. The round cut-out cookies are decorated with orange icing.
Ingredients
- 1 cup (2 sticks) butter, softened
- 1 cup packed light brown sugar
- 1 large egg yolk
- 2 1/2 cups all purpose flour
- 1 Tbsp pumpkin pie spice
- 1 tsp baking soda
- 1 tube (4.25 ounces) orange icing

Method
1.Preheat oven to 375 degrees. Line baking sheets with parchment paper or leave ungreased. 2. Cream butter with brown sugar in a medium bowl with electric mixer on low until smooth; stir in egg yolk. 3. Mix flour, pumpkin pie spice and baking soda in a large bowl. Stir into the butter mixture. Mix until dough is firm and smooth. Form dough into a disk; wrap in plastic wrap and chill dough about 30 mins. 4. Roll dough to 1/4-inch thickness on a lightly floured surface. 5. Cut out cookies with a 3 1/2-inch round cookie cutter and place 2-inches apart on prepared baking sheets. Bake until lightly browned around the edges, 10-12 mins. Remove from oven and transfer cookies to a wire rack; cool completely. 6. Create faces on pumpkin cookies using the orange icing.
Notes: If a 3 1/2-inch round cookie cutter is not available, a clean wide mouth glass jar works well too. For whole-wheat cookies, substitute 2 1/2 cups whole-wheat flour for the all purpose flour. Use a whole egg instead of just the yolk.
