Fudgey Brownies

These chewy brownies are great alone or make a great base for a brownie hot fudge sundae.
 

Ingredients

  • 1/2 cup butter, melted
  • 1/2 cup unsweetened cocoa
  • 1 tsp instant coffee powder, optional
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/2-1 cup chocolate chips; semisweet, white, butterscotch, peanut butter, or chopped nuts, M&M's or Reese's pieces, optional

Method

Preheat oven to 350 degrees. Grease an 8 inch square pan, line with foil or use wax paper for easy removal later. In a medium bowl, combine butter and cocoa, then stir until cocoa is dissolved. Add instant coffee powder, if desired. Add sugar and mix well. Add eggs, one at a time and stir until well combined. Stir in vanilla, flour and salt until all flour is incorporated, but do not overmix. Fold in chocolate chips or nuts. Spread in pan and bake for approximately 25 minutes but do not over bake or brownies will come out dry. Adjust time and temperature accordingly for each oven. If testing for doneness using a toothpick, it should come out with moist crumbs, not clean. Cool completely before cutting into squares. For a double recipe, bake in a 9 X 13 pan and add 5 minutes to baking time.
