Fudge-full Peanut Butter Bars

Dessert bars that are made with cake mix, peanut butter, and coconut. This is an easy dessert to make and one that will go quickly.
 

Ingredients

  • Cake:
  • 1 pkg yellow cake mix
  • 1 cup peanut butter
  • 1/2 cup margarine, melted
  • 2 eggs
  • Filling:
  • 1 cup chocolate chips
  • 14 oz can of sweetened condensed milk
  • 2 Tbsp margarine
  • 1 cup coconut

Method

Mix first four ingredients until you have a thick dough. Spread about 2/3 of the dough into a 13x9" pan. Save the other 1/3. Heat chocolate chips, milk, and margarine on stove until melted. Stir frequently this won't take long. When smooth, remove from heat, and add coconut. Pour this over the dough, and then drop remaining dough over the filling by spoonfulls. Bake at 350*F for 20-25 minutes. If using a glass pan decrease heat to 325*.

 

Notes: This is a very rich dessert or bar cookie. Very easy to make, and can be made with low fat products and it is just as good.
