Filled Strawberry Cookies

These special holiday cookies are a snap to make when you use a packaged cake mix and a simple cranberry filing.
Ingredients
- 1/4 cup butter
- 1 (8 ounce) package Neufachel cheese, softened
- 1 egg
- 1/4 teaspoon cinnamon extract
- 1 package strawberry cake mix
- Cranberry Filling:
- 1/4 cup dried sweetened cranberries
- 1/4 cup strawberry preserves
- 3 tablespoons water

Method
Preheat oven to 375 degrees. In small bowl beat butter and cheese until light and fluffy. Beat in egg, cinnamon extract and half dry cake mix until smooth. Stir in remaining cake mix. Cover and chill while you prepare cranberry filling. Filling: Simmer dried cranberries, strawberry preserves and water in small sauce pan over medium heat for 5 minutes and set aside. Cookies: Roll dough, about 1/3 at a time to about 1/8 inch thick, on lightly floured board. With floured knife cut dough into 1 1/2 inch squares (as close as you can get). Place half the squares on ungreased cookie sheet. Spoon 1/2 teaspoon filling onto each. Top each with another square. Press together so edges are sealed. Score top of each with an X. Bake ten minutes or until lightly browned.
Notes: With the new ingredients available now I enjoy making these with cranberries instead of raisins. These are cookies I like to make at the holidays.
