Family Favorite Cranberry Cointreau Cookies

These cookies are packed with plenty of flavor. The cranberries are soaked in Cointreau overnight and added to chocolate chips, pecans and walnuts.
 

Ingredients

  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 3 eggs
  • 3 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Zest of two oranges
  • 1 cup buttermilk
  • 1 cup of Cointreau
  • 2 cups cranberries
  • 1 cup chocolate chips
  • 2 cups chopped pecans
  • 2 cups chopped walnuts
  • 1 cup toasted sliced almonds

Method

Soak cranberries in Cointreau overnight. Place soaked cranberries in a strainer and set aside. Heat oven to 350 degrees and toast almonds for about 15 minutes until golden then set aside. In a large mixing bowl, cream butter and sugar. Add eggs, one at at a time, mixing well after each addition. Combine flour, salt, baking powder, baking soda and cinnamon. Add alternately with buttermilk to cream mixture. Stir in orange zest, vanilla, cranberries, almonds, chocolate chips, pecans and walnuts. Drop dough by heaping tablespoonfuls onto greased baking sheets. Bake about 12 minutes or until lightly browned. Remove to wire racks to cool.
