Fabulous Gluten-Free Cookies

These cookies use tapioca, potato, rice, and flax seed flours rather than wheat flour for a tasty drop cookie. They work best baked on a baking mat.
 

Ingredients

  • 3/4 cup melted butter
  • 1/2 cup sugar
  • 1 cup packed brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 Tbsp. vanilla
  • 1/2 cup tapioca flour
  • 1/2 cup potato flour
  • 1/2 cup rice flour
  • 2 Tbsp. flax seed flour

Method

Mix the first eight ingredients well. Add flours. Mix well. Let rest 20 minutes. Drop by spoonfuls onto a SILPAT and bake at 350 for 8 to 10 minutes. Remove and cool on wire racks.

 

Notes: This is a wonderful recipe that has NO GLUTEN. As the demand for more gluten free cooking goes up my desire to create recipe for people with food allergies also goes up. I have people who want this recipe who are not even gluten intolerant.
