Easy Oatmeal Pear and Cranberry Bars

Pears, dried cranberries and sweetened condensed (not evaporated) milk form the filling between layers of an oat-brown sugar dough flavored with spice.
 

Ingredients

  • 1 cup butter at room temperature
  • 1 cup packed brown sugar
  • 1 1/2 cups flour
  • 1 1/2 cups old fashioned rolled oats (not quick cooking)
  • 1 Tbsp pumpkin pie spice
  • 3 ripe pears, peeled and diced
  • 1 cup dried cranberries
  • 14 oz can sweetened condensed milk

Method

Preheat oven to 350 degrees. Butter or spray a 9x13-inch baking pan. Cream butter and sugar together in a medium bowl. Add flour, oats and spice; mix well. Press two-thirds of the oat mixture into the bottom of the pan; set aside. Mix the pears, cranberries and condensed milk together in a bowl. Pour over oat mixture in pan. Top with remainder of the oat mixture; bake about 35 minutes or until golden brown. Cool and cut into squares.

 

Notes: This recipe is an easy change from a pie, and it tastes GREAT.
