Double Almond Cookies

These drop cookies actually have almonds in three forms--almond paste, almond extract, and slivered almonds. The batter has no flour, but uses a meringue-like mixture of egg whites and powdered sugar.

- 2 cups almond paste, crumbled
- 4 large egg whites
- 2 cups powdered sugar
- 1 teaspoon almond flavoring
- 1 cup slivered almonds

Preheat oven to 325F. Line a large baking sheet with parchment paper. In a food processor or electric mixer combine the almond paste, the egg whites, the sugar and the flavoring. Process or beat until the mixture is well blended and smooth. Drop by scant tablespoonfuls on the prepared baking sheet. Top each cookie with several slivered almonds. Bake until cookies are light brown and set, about 16-18 minutes. Remove from oven and allow cookies to cool on pan for 10 minutes. Remove cookies to a rack and cool completely. Makes about 30 cookies.
