Devilishly Dark Chocolate-Oatmeal Cookies

These jumbo chocolate chip drop cookies combine flour, rolled oats, and two kinds of sugar, with cinnamon plus chili powder for a bit of the unusual.
 

Ingredients

  • 1 1/4 cups all purpose flour
  • 1 cup regular oats
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp chili powder
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup butter, softened
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 cup dark chocolate chips

Method

Preheat oven to 350 degrees. Combine all dry ingredients except chips, stir with a whisk, and set aside. Place butter, egg, and vanilla in a large bowl then beat with a mixer at medium speed until well blended. Slowly add dry mixture, beating at low speed just until combined. Fold in dark chocolate chips. Drop dough in heaping amounts, 2 inches apart onto baking sheets lined with parchment paper. Bake at 22-24 minutes, or until edges of cookies are lightly browned. Cool on pans 2 minutes. Remove cookies from pans and cool on wire racks.

 

Notes: The chili powder is an odd twist for a cookie, but it truly accents the dark chocolate chip favor.
