Crunchy Chocolate Chip Cookies


A little change from the usual oatmeal-chocolate chip cookies; these have a crunch from Grape Nuts cereal nuggets.



Ingredients:

  • 3/4 cup butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 cup rolled oats
  • 3/4 cup Grape Nuts cereal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12-ounce bag dark chocolate chips
  • Baking spray coating (Pam with flour)

Method

In a large mixing bowl beat butter, brown sugar, granulated sugar, eggs, and vanilla with a mixer. Stir in flour, oats, cereal, baking soda and salt with a large wooden spoon. Stir in chocolate chips. Cover bowl with plastic wrap and refrigerate at least 3 hours. Preheat oven to 350 degrees. Spray baking sheets with cooking spray that has flour in it. Using two small spoons, drop batter evenly onto baking sheets. Bake to desired doneness. Remove from sheets and place on wire cooling rack immediately after taking out of oven.

Notes: A classic treat for the perfect picnic, these cookies are ideal for those who like their chocolate chip cookies to have a bit of crunch. They store easily and travel flawlessly.
