Cranberry Date Bars

A crumbly mixture of rolled oats, flour, brown sugar, and butter makes the base and topper of this cookie bar recipe. A cooked mixture of cranberries and dates is sandwiched between to make this a delicious holiday dessert bar.
 

Ingredients

  • 1 pkg. fresh cranberries (12 oz.)
  • 1 pkg. chopped dates (8 oz.)
  • 1 tsp. vanilla
  • 2 cups flour
  • 2 cups rolled oats
  • 1 1/2 cups brown sugar
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1 cup butter

Method

In a saucepan combine cranberries, dates, and 3 tablespoons water. Cover & cook over low heat for 15 minutes, or until cranberries "pop." Remove from heat and stir in vanilla. In bowl combine flour, oats, sugar, soda, and salt. Cut in butter until crumbly. Press half of the crumb mixture into a greased 13x9x2-inch pan. Bake at 350 degrees for 8 minutes. Spoon cranberry-date mixture over the crust, spreading carefully. Sprinkle with remaining crumb mixture and pat gently. Bake for 20 to 25 minutes more.

 

Notes: This is a good holiday bar cookie.
