Cornmeal Toffee Cookies

Cornmeal adds a crunch to these drop cookies which use a little buttermilk, and have some crushed toffee pieces folded into the batter.
Ingredients
- 3/4 cup (unsalted) butter, softened
- 3/4 cup sugar
- 1 egg
- 1 1/2 cups flour
- 1/2 cup yellow cornmeal
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tsp vanilla
- 1 Tbsp buttermilk
- 1/2 to 1 cup crushed toffee pieces

Method
Preheat oven to 350 degrees. Cream butter and sugar in large mixing bowl. Add egg and beat well. Add rest of ingredients except toffee pieces and mix well. Fold in toffee pieces. Drop dough from a teaspoon onto a greased baking sheet. Bake for 12 to 15 minutes till lightly browned around the edges.
Notes: You may also replace toffee pieces with chocolate chips, peanut butter chips, raisins, or nuts. You can even mix them, as long as you don't add more than a cup altogether.
