Confetti Sandwich Cookies

2 crisp chocolate cookies filled with sweet cream cheese and brightly colored specks of chocolate candy.
 

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tsps vanilla
  • 1 14 oz can sweetened condensed milk 1 3 oz package chocolate fudge instant pudding and pie filling
  • 1 1/4 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • Filling:
  • 2 8 oz packages cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 2 cups candy coated, plain chocolate candies, chopped

Method

In a medium bowl, cream together butter, shortening and brown sugar until light and fluffy. Beat in eggs and vanilla. Stir in sweetened condensed milk and dry pudding. Sift together flour, soda and salt. Mix flour and wet ingredients well, then cover bowl and chill overnight. Form dough into walnut size balls and roll in granulated sugar. Place balls on plates and keep in refrigerator until all dough is used. Heat oven to 350 degrees. Bake on greased cookie sheets for 10 minutes. Place 2 cooled cookies together with filling and store in refrigerator. Filling: Beat cream cheese and powdered sugar together until light and fluffy. Stir M&M's into cream cheese mixture.

 

Notes: This recipe seems a bit messy to make, and takes a bit of time, but the rich cookie is so worth it.
