Colossal Cranberry Almond Cookies

These drop cookies use rolled oats instead of wheat flour. They also contain almond butter, dried cranberries, toasted almonds & white chocolate chips.
Ingredients
- 2/3 cup butter, melted
- 1 1/4 cups packed brown sugar
- 3/4 cup granulated sugar
- 3 eggs, beaten
- 1 1/2 cups almond butter
- 2 tsp baking soda
- 6 cups regular rolled oats (not instant)
- 1 1/2 cup dried cranberries
- 1 cup almonds, slivered and toasted
- 12 oz white chocolate chips

Method
Combine melted butter, the sugars, eggs and almond butter until well blended. Stir in the soda, oats, cranberries, almonds and chips. Use an ice cream scooop to drop onto cookie sheet; press down slightly. Bake at 350 degrees for 12-13 minutes. Cool on rack.
