These almond-flavored, shaped cookies have pecans & coconut in the dough, and are dipped in a honey & pineapple syrup after baking.
Cream butter, sugar, vanilla, and almond extract well. Stir in flour, pecans, and coconut. Using about a rounded teaspoon of dough each, shape dough into balls. Place on an ungreased cookie sheet and bake at 350 degrees for 15-18 minutes, until light brown. While cookies are baking, prepare glaze, and dip cookies quickly into pineapple glaze while still warm.
Glaze:
In saucepan combine all ingredients. Simmer, uncovered, for 5 minutes. Cool to lukewarm.
Notes:
Let cookies stand for 1 hour before serving or storing.
