Christmas Chocolate Chip, Coconut Cookies

Ingredients:
| 1 cup | Softened Butter |
| 1 cup | Sugar |
| 1 cup | Packed Brown Sugar |
| 2 | Eggs |
| 2½ cups | Flour |
| 1 tsp | Baking Soda |
| 1 tsp | Baking Powder |
| 1 tsp | Salt |
| 2½ cups | Flaked Coconut |
| 1½ cups | Mini Morsel Chocolate Chips |
| White & Brown Chocolate Candy Coating |
Directions:
Cream butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda, baking powder and salt; gradually add to the creamed mixture. Stir in coconut and chips. Form 2" balls and place 3" apart on parchment covered cookie sheets. Bake at 350 degrees for 12-14 minutes, or until lightly browned. Be careful not to over bake. Cool on pans 5 minutes and then remove to wire rack to cool completely. Microwave candy coatings at 30 second intervals until they can be stirred smooth. Dip edge of cooled cookie in white candy coating and place on wax paper. When coating is set, dip other side in chocolate coating and place back on wax paper until set.
Helpful Tips:
Optional -- Decorate with red and green gel across cookie if desired. Regular semisweet chocolate chips or butterscotch chips can be used in place of the mini morsels.
