Chocolate Peanut Butter Pillows

Shape these peanut butter and chocolate chip cookies into balls and pop into the freezer--then just place on a cookie sheet and bake as needed.
 

Ingredients

  • 1 18.5 oz pkg chocolate cake mix
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2 level teaspoons instant coffee
  • 1 teaspoon almond extract
  • 1/3 cup water
 
Method

In a large bowl combine all ingredients and blend well. Form slightly rounded teaspoons of dough into 1 inch balls. Place balls on a cookie sheet. (Note the balls may be touching but do not crowd.) Set cookie sheet with formed balls in freezer for about 2 hours. When dough is frozen, place balls in a plastic bag, exhaust air, and return to freezer. When you want to bake cookies, preheat oven to 375 degrees. Decide how many cookies you want and remove them from freezer. Place them 2 inches apart on an ungreased cookie sheet. Bake in for 12 to 14 minutes. Cool for 1 minute and then remove from cookie sheet.

Number of Servings: Makes about 7 1/2 dozen cookies
