Chocolate Molton Cookies

These luscious chocolate cookies have a crisp exterior, but a soft, goey center similar to chocolate molton lava cake.
 

Ingredients

  • 1 box dark chocolate fudge brownie mix
  • 2 large eggs
  • 3/4 cup vegetable or canola oil
  • 2 tablespoons butter, softened
  • 1 8 oz package cream cheese, softened
  • 1 1/2 cups confectioners sugar
 
Method

Cream together butter, cream cheese and oil. Add brownie mix and eggs then mix until well combined. Cookie dough will be sticky and thinner than usual cookie dough. Refrigerate cookie dough for at least 1 hour to stiffen. Preheat oven to 350 degrees. Roll 1 tablespoon cookie dough into 1-2 inch balls and toss in confectioners sugar, covering completely. Place on an ungreased cookie sheet 2 inches apart. Bake 8-10 minutes but do not overbake, as cookies should be very soft to touch. Transfer to a wire rack and cool completely then dust with remaining confectioners sugar.

 

Notes: Baking time will vary, depending on your oven and the size of cookies. It may be necessary to adjust the baking time accordingly. The end result should be a cookie that is crispy at edge and graduating to a gooey center. The cookies will harden slightly when cooled. They may be stored in an airtight container up to one week.
