Chocolate Chip Almond Butter Cookies

Almond butter is used along with butter, almond extract, ground rolled oats, brown & granulated sugars, and semisweet chocolate chips in these drop cookies.
 

Ingredients

  • 3/4 cup almond butter
  • 1/2 cup butter
  • 2 eggs
  • 1 1/2 tsp. almond extract
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup ground rolled oats (I used my coffee grinder and got a nice coffee flavor in the cookies, or add 1/2 tsp of ground espresso)
  • 2 cups sifted flour
  • 12 oz. pkg. semisweet chocolate chips
  • Whole almonds to garnish, if desired

Method

In small bowl sift flour, ground oats, baking soda, and salt and mix until blended. In another bowl beat with a mixer the butters, eggs, sugars, and almond extract. Add flour mixture to wet ingredients, and stir until blended. Add Chocolate chips. Drop onto ungreased cookie sheet by the teaspoon. Top with a whole almond, if desired. Bake at 375 F for 10 minutes.

 

Notes: This recipe is loaded with chocolate chips. Use a good quality chocolate for the best flavor.
